The chistorra is a type of sausage of Navarran and Aragonese origin made with fresh minced pork, although it can also be a mixture of pork and beef, and which contains between 70 and 80% fat depending on the category, in addition to garlic, salt and paprika, which usually gives it a characteristic red color, as well as aromatic herbs.
